Kaluga Hybrid Caviar is a premium roe derived from the crossbreeding of the mighty Kaluga sturgeon (Huso dauricus) and the Amur sturgeon (Acipenser schrenckii), both native to the Amur River basin in northeast Asia. This carefully controlled hybrid yields a caviar that combines the size, texture, and delicacy of Beluga with the nutty, clean character of Amur—striking a remarkable balance between luxury and sustainability.

Appearance:

Kaluga Hybrid caviar features impressively large, firm pearls—often 3.2mm or larger—with luminous shades of silvery grey, olive bronze, or golden brown. The grains are glossy and consistently shaped, with an elegant, high-end finish.

Flavor Profile:

A rich, creamy palate with buttery overtones and a deep umami foundation. Less salty than other varieties, Kaluga Hybrid offers a smooth and elegant flavor, punctuated by notes of roasted hazelnut, sea breeze, and a hint of sweetness on the finish. It is bold yet remarkably clean, making it highly versatile for refined pairings.

Texture:

The eggs have a firm yet delicate membrane, providing that luxurious, satisfying "pop" as they release their complex flavors. This texture is a defining feature of Kaluga roe, akin to the best of Beluga.
